Favorite Breakfast Foods… Past & Present

What was your favorite breakfast food as a kid?  If you were to ask anyone in my family growing up, every single sibling would say in unison: “CEREAL!”  Since I have 4 brothers and a sister, I’m sure my mom had to be really organized and budget-conscious to be able to keep us all fed.  We had a very well-planned out menu for breakfasts…

  • MONDAY- hot cereal- either oatmeal or cream of wheat
  • TUESDAY- pancakes (or sometimes french toast)
  • WEDNESDAY- eggs & toast
  • THURSDAY- biscuits or muffins
  • FRIDAY- cold cereal day!  Wahoo!
  • SATURDAY- waffles
  • SUNDAY- cinnamon rolls or breakfast “coffee” cake (we don’t drink coffee, so we just call it breakfast cake)

NOW, however, my tastes have changed, and cereal is no longer my first choice for breakfast.  (Funny how as soon as you move out of the house, go away to college, and start to eat whatever you want, like cereal EVERY day, it’s not quite so special anymore…)  Although most days I am too busy to prepare much other than grabbing a Nutri-grain bar on the way out the door, I do love a variety of breakfast foods, just like the variety my mom used to provide for us when we all still lived at home!  I love pancakes (strawberries & whipped cream are a given), fresh-out-of-the-oven cinnamon rolls with just a touch of glaze, fresh donuts (chocolate-frosted or lemon-filled/powdered-sugar-covered; Dunkin’ Donuts are the best), blueberry muffins, BACON, fried eggs over-medium, breakfast casseroles, etc.  One of my favorites lately has been a toasted plain or blueberry bagel, spread with cream cheese, and sliced fresh strawberries on top.  Mmmmmm… my mouth waters just thinking about it!  My recipe post for today is my mom’s cinnamon roll recipe.  It is from her “Mom’s Cookbook,” filled with the most amazing and memorable recipes of all time.  It’s a recipe book that she made for all of her kids back in 2003.  Thanks, mom!

    I am not much of a “breakfast person”. Growing up the only thing I would eat for breakfast, and I mean only, was chocolate Carnation Instant Breakfast.

    Now, each morning, my breakfast routine is half a container of Tillamook Vanilla Bean yogurt (it has to be Tillamook, made here in Oregon) and a scoop of Almond granola from the bulk bins at Winco.

    I do enjoying making a big breakfast for my family on the weekends – some of their favorites are overnight, yeast waffles, Yellow Pancakes and omelets!

    Cereal was always a tradition in my family as well. Santa would leave a box for each kid on Christmas. We would then eat very little Christmas day other than cereal. No real favorites here though. Honey-nut cherios were the staple in the Jensen home.

    Lucky Charms all the way! I don’t know if you remember or not but we not only got to pick the cereal, but then got to pick who of the other 5 children got to pour theirs next. For my birthday I always picked YOU, Rach, but on one occasion I remember we got into a little tift the day before and I changed my pick to Stephen! I still feel guilty over that! Wanna come over and have some Lucky Charms? I’ll let you have the first bowl!

    We had so many different kinds of breakfast foods. Cereal was (and still is) a morning staple. Although “sugar” cereals (Lucky Charms) were for Sundays only. At my parents’ cabin, my dad always makes scrambled eggs and I loved those growing up and still do. But my absolute favorite breakfast is an omelette.
